Vegan Maple Caramel Popcorn

We actually call this Crackcorn because once you start eating it, it's simply impossible to stop! Luckily, it's a healthy snack or dessert option. It's got the perfect balance of sweet and salty and the caramel sauce is super easy and quick to make. 

INGREDIENTS

1/3 cup of popcorn kernels
1 tbsp coconut oil
3/4 cup flaked almonds
1/2 cup of maple syrup
3 tbsp of Sweet Roasted Peanut Butter
1/4 tsp salt
1/4 tsp cinnamon

Vegan Maple Caramel Popcorn

METHOD

  1. Preheat oven to 180º
  2. Heat coconut oil in a large pot, add a couple kernels, if they sizzle then you are ready
  3. Put all the popcorn kernels into the pot and cover with the lid, cook until you hear no more popping. Remove and place in a large mixing bowl
  4. For the caramel sauce, in a small saucepan, bring the maple to a boil over medium heat and boil for 2 minutes then whisk in the peanut butter, salt and cinnamon
  5. Pour over the popcorn and mix together
  6. Line a large baking tray and transfer the popcorn to the tray
  7. Cook for 6 minutes in the oven (check half way in case the pan needs to be rotated)

Hi Radhapriya! Yes, add the flaked almonds before you mix the caramel sauce in and it does go in the oven (gives a nice toasted flavour). Hope you enjoy 😊

When do you add the flaked almonds? After you mix in the caramel sauce before putting in the oven?
