Fibre-Packed Minestrone Soup

We are definitely a soup all-year-round kinda family but there is one soup that is on repeat in our household...our Italian inspired fibre-packed minestrone! We love this one because you can use pretty much any vegetables you have in the fridge (including those random spares in the back of the veggie draws) and chances are you already have most of the other ingredients in your cupboard already. It's super simple, plus it's packed with fibre and nutritious goodness from the beans, vegetables & wholewheat pasta to keep you full & satisfied.


INGREDIENTS
1 x tbsp extra virgin olive oil
1 x red or brown onion (chopped)
4 cups x any vegetables (chopped)
4 x garlic cloves (minced)
800g x diced tomatoes (2 cans)
1 x can mixed beans
1 litre vegetable stock
1 cup fresh parsley (finely chopped)
1/2 cup x brown pasta (spirals or penne) 
1 tbsp dried basil leaves
1/2 tsp salt

METHOD

  1. Heat olive oil in a large pot
  2. Add onion, vegetables, garlic, basil & salt and cook for 5 minutes (or until soft)
  3. Add stock, tomato & beans then bring to the boil and simmer (lid on) for 30 minutes
  4. Add pasta & parsley and continue to simmer (lid off) for 10 minutes.
  5. Remove from heat and let cool to desired temperature.
  6. Top with fresh parsley and enjoy!
