Chocolate Nicetella Pancakes

Our go to pancake recipe, delicious and also fail proof for fluffy vegan clouds of deliciousness! These are so simple and whipped up in no time with ingredients that are possibly in your cupboard already. The trick here is to make sure you let the batter rest for 10 minutes to maximise the aeration/fluffiness...thank us later!

1 cup flour (can use 1/2 cup wholemeal & 1/2 cup white flour)
2 tbsp coconut/brown sugar
1 tbsp dark cacao
1 cup soy milk
1/2 tsp sea salt (fine)
1 tbsp apple cider vinegar
2 tbsp Nicetella
2 tbsp maple syrup 
1/2 cup fresh berries

  1. Mix all the ingredients in a large bowl until smooth
  2. Rest for 10 minutes - this part is important!
  3. Melt butter/nuttelex in a medium non stick fry pan
  4. Pour 1 ladle of mixture into the pan
  5. When bubbles begin to appear (around 1-2 minutes) then flip
  6. Cook for a further 1 minutes then transfer to a plate
  7. Serve with mixed fresh berries, drizzle with maple and smother with Nicetella
