Pumpkin Peanut Butter Spiced Bliss Balls

This recipe was inspired by Autumn and it's beautiful seasonal creation of pumpkin.  Nothing like a bit of pumpkin with a little spice thrown to cure the early Autumn chills! These bliss balls cannot get any easier (or tastier)..simply put all the ingredients into a food processor and voila you are done! Packed with sweet pumpkin, salty creamy peanut butter, dark maple syrup with a touch of warming cinnamon there is absolutely no way you can wrong with this recipe.⠀⠀

INGREDIENTS⠀⠀⠀⠀⠀⠀⠀

2 cups oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup canned pumpkin puree (we boiled then mashed ours)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup Sweet Roasted Peanut Butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup pumpkin seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 teaspoon cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup maple syrup
1/2 cup desiccated coconut⠀⠀⠀⠀⠀⠀⠀⠀⠀
generous pinch of salt⠀⠀⠀⠀

Pumpkin Peanut Butter Spiced Bliss Balls

METHOD

  1. Place all ingredients into a food processor and blend until combined a dough forms
  2. Scoop and roll into tablespoon balls
  3. Roll the balls in desiccated coconut until coated
  4. Freeze for 2 hours until hard
  5. Store in fridge for up to 3 weeks...if they last that long!
