PROTEIN PACKED VEGAN BURGERS

Preparation time: 30 mins prep +  10 min cooking time

Serves: 4

We've tried a lot of plant-based burger recipes in our time and this one is hands down THE BEST! Peanut butter may seem unusual to add to a burger but it adds a nice nutty flavour PLUS adds more protein. This burger pattie has the perfect balance of flavours and the slaw adds some crunch and freshness!

INGREDIENTS

Pattie
1 can chickpeas, mashed with a fork
1/2 red onion, finely diced
1 small zucchini, grated
3 tbsp coriander, roughly chopped
3 tbsp apple cider vinegar
1 tbsp sriracha sauce
2 tbsp Sweet Roasted Peanut Butter
1 tsp cumin
1 tsp garlic powder
2 tsp black pepper
1/2 tsp sea salt
1 cup quick oats (if GF then sub for quinoa flakes)
2 tbsp extra virgin olive oil

Slaw
1 carrot (grated)
1/4 red cabbage (grated)
1 tbsp olive oil
Juice of 1 lime
1/2 tsp sea salt

4 vegan brioche buns (Fry's brand is amazing)
1 ripe avocado
Iceberg lettuce
Red onion (sliced)

METHOD

Pattie

  1. After draining and rinsing the chickpeas, place in a large bowl and mash them with a fork
  2. Add all the other ingredients to the bowl and use your hands to mix
  3. Form 4 generous patties
  4. Cook on non stick fry pan for 5 minutes each side (until golden)

Slaw
Combine all ingredients in a medium bowl and mix

Assembly
1. Toast brioche buns then add avocado to both sides of the bun
2. Add lettuce, red onion, pattie to the bun and top with slaw

Grab with both hands and go for it!!
