PROTEIN PACKED PLANT-BASED BURGERS

Preparation time: 30 mins prep +  10 min cooking time

Serves: 4

We've tried a lot of plant-based burger recipes in our time, and this one is hands down the best! Adding peanut butter to a burger patty may seem unconventional, but it adds a nice nutty flavour plus it ups the protein. This burger patty has the perfect balance of flavours, while the slaw adds some refreshing crunch and freshness!
 

INGREDIENTS

Patty
1 can chickpeas, mashed with a fork
1/2 red onion, finely diced
1 small zucchini, grated
3 tbsp coriander, roughly chopped
3 tbsp apple cider vinegar
1 tbsp sriracha sauce
2 tbsp Sweet Roasted Peanut Butter
1 tsp cumin
1 tsp garlic powder
2 tsp black pepper
1/2 tsp sea salt
1 cup quick oats (sub for quinoa flakes if you want gluten-free)
2 tbsp extra virgin olive oil

Slaw
1 carrot (grated)
1/4 red cabbage (grated)
1 tbsp olive oil
Juice of 1 lime
1/2 tsp sea salt

4 vegan brioche buns (Fry's brand is amazing)
1 ripe avocado
Iceberg lettuce
Red onion (sliced)

METHOD

Patty

  1. After draining and rinsing the chickpeas, place them in a large bowl and mash them with a fork
  2. Add all the other ingredients to the bowl and use your hands to mix
  3. Form 4 generous patties
  4. Cook on non stick fry pan for 5 minutes each side (until golden)

Slaw
Combine all ingredients in a medium bowl and mix

Assembly
1. Toast brioche buns then add avocado to both sides of the bun
2. Add lettuce, red onion, patty to the bun and top with slaw

Grab with both hands and go for it!!

Everyone loves a burger
Simple, easy to make and yummy… just how we like it….
And I feel the need to mention.. so healthy
