CRISPY TOFU WITH SWEET & STICKY NOODLES

CRISPY TOFU WITH SWEET & STICKY NOODLES

YES, we can confirm it is even more delicious than the photos! Give this one a go....you can thank us later. Sticky, sweet & crunchy this recipe packs a massive punch with its incredible flavours! This has become an absolute go-to in our household and best of all our little toddler is also a fan (minus the chilli!!). Plus, with the generous serve of tofu, this meal is loaded with plant-protein. 

INGREDIENTS

1 packet of fried tofu
2 tbsp coconut oil (tasteless)
1 bunch of gai lan (chinese broccoli)
1 bunch bok choy
1 red onion (sliced)
1/2 cup cashews
1 chilli
3 spring onions
1 packet of dry udon noodles

Sauce
2 tbsp sesame oil
4 cloves garlic (minced)
1 large knob ginger (minced)
4 tbsp brown sugar
4 tbsp rice wine vinegar
2 tsp cornstarch
1/2 cup tamari
1/4 cup of water
2 tsp Sriracha (leave out if you don't like spicy)

CRISPY TOFU WITH SWEET & STICKY NOODLES

METHOD

  1. Melt coconut oil in a wok or large fry pan
  2. When oil is HOT, add red onion and cook for 2 minutes
  3. Add gai lan, bok choy, tofu & cashews and cook for 3 minutes
  4. Remove and place in a bowl
  5. Melt sesame oil in the wok/large fry pan
  6. Add ginger and garlic and cook for 1 minute (don't let it burn!)
  7. Add brown sugar and let it caramelise
  8. Add remaining ingredients and give it a good stir to make sure no lumps are in cornstarch. Let gently simmer whilst you cook the noodles.
  9. Cook noodles as per packet instructions then drain, add and coat in the sticky sauce 
  10. Top with thinly sliced red chilli, chopped spring onion and sprinkle with sesame seeds

Serve generously and enjoy with friends or family x
