Hands down the BEST plant based hamburger ever! My mouth is actually watering right now thinking of them....this is an absolute must try. It's as simple as putting all the ingredients in a bowl and mixing it with your hands so no excuses if you think you can't cook!
INGREDIENTS
- 1 can chickpeas, mashed with a fork
- 1/2 red onion, finely diced
- 1 small zucchini, grated
- 3 mushrooms, finely chopped
- 3 tbsp coriander, roughly chopped
- 3 tbsp apple cider vinegar
- 1 tbsp sriracha sauce
- 2 tbsp Sweet Roasted Peanut Butter
- 1 tsp cumin
- 1 tsp garlic powder
- 2 tsp black pepper
- 1/2 tsp sea salt
- 1 cup quick oats (if GF then sub for quinoa flakes)
- 2 tbsp extra virgin olive oil
- 4 wholemeal hamburger buns
- Pickles, pickled cabbage, avocado, tomato chutney or any other combo of filling you like

METHOD
- After draining and rinsing the chickpeas, place in a large bowl and mash them with a fork
- Add all the other ingredients to the bowl and use your hands to mix
- Form 4 generous patties (wet hands with water if mixture gets stuck to your hands)
- Cook on non stick fry pan for 5 minutes each side.
