Banana & Blueberry Muffins

Preparation time: 15 mins + 25-30 min cooking 

The ultimate go to snack, our Banana and Blueberry Muffins are super quick, super easy, super healthy and most importantly super delicious! 


  • 2 ripe bananas
  • 1 cup blueberries
  • 2 flax eggs (2 tbsp ground flax + 6 tbsp water, whisk together, set for 15 mins)
  • ½ cup almond milk
  • 1 ¾ cup oat flour (oats in a food processor)
  • 1 ¼ cup Coco-Berry Porridge
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon⠀


  1. Preheat the oven to 160 degrees and line or grease a 12-muffin pan
  2. Peel bananas, add to a large mixing bowl and mash with a fork
  3. Add flax eggs & almond milk and whisk until combined
  4. Add oat flour, Coco - Berry Porridge, baking powder, blueberries, baking soda, cinnamon and mix until combined
  5. Use a spoon to fill the muffin tin until each cup is 3/4 of the way full
  6. Sprinkle the tops of muffins with Coco - Berry Porridge
  7. Bake for 25- 30 minutes
  8. Allow to cool on a cooling rack for about 1 hour
