Coco-Berry Carrot Muffins

Carrot Coco-Berry Muffins

Coco-Berry Carrot Muffins, these little friends are SO delish. Super soft centre, crispy bits on the outside, 100% healthy and a perfect on the go snack, can't get any better than that. I can't stress enough how super moist these little guys are, it's like eating a cloud that has been to heaven and back!

INGREDIENTS

  • 2 tablespoons flax meal
  • 5 tablespoons water
  • 1 3/4 cups oat flour
  • 1/2 cup of Coco-Berry Porridge
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons coconut oil
  • 3/4 cup unsweetened almond milk
  • 3/4 cup carrots grated
  • 1 tsp vanilla extract

Carrot Coco-Berry Porridge Muffins

METHOD

  1. Preheat oven to 180 degrees & line or grease a 12 muffin tray
  2. Make flax egg by combining flax meal and water
  3. Add the Coco-Berry Porridge, baking powder, baking soda, oat flour and salt to a large mixing bowl and mix
  4. Add the apple sauce, almond milk and vanilla to the flax egg
  5. Add the wet ingredients into the dry ingredients and stir until well combined
  6. Pour into the muffin tin and bake for 20 minutes
  7. Cool for 10 minutes then eat
