Caramalised Banana Crepes

Ready to elevate your crepe game? This Caramelised Banana Crepe recipe is a match made in breakfast heaven. Imagine soft, golden crepes filled with luscious bananas coated in a creamy, peanut butter-infused caramel sauce. The combination of textures and flavours is simply irresistible, making this dish perfect for a special breakfast, a sweet afternoon snack, or an indulgent dessert. With simple steps and ingredients you probably already have on hand, these crepes will soon become a new favourite

INGREDIENTS

Caramel Banana Sauce:
3/4 cup brown sugar
1 cup full-fat coconut milk, from the can 
1 tablespoon Stone Age Sweet Roasted Peanut Butter
2 bananas, sliced lengthwise

Crepes:
1&1/2 cups all-purpose flour
1 tablespoon cornstarch
1/4 teaspoon salt
2 tablespoons extra virgin olive oil (EVOO)
1 cup unsweetened soy milk
1 cup sparkling water


METHOD

Caramel Sauce:

  1. Heat a pot over medium-high heat.
  2. Add the sugar and stir around the pot for about 1 minute to heat through.
  3. Add the coconut milk and bring to a boil.
  4. Add peanut butter and stir.
  5. Add sliced banana and coat in sauce.
  6. Reduce to a simmer at low-medium heat and let simmer for about 15 minutes, stirring occasionally until the caramel has thickened and the bananas have charred slightly (the caramel should stick to the back of your spatula or spoon).
  7. Remove the pan from heat and let it cool for 10 minutes while you make the crepes!
Crepes:
  1. Mix the flour, cornstarch and salt in a large bowl.
  2. Pour in the oil, soy milk, and sparkling water, and whisk until the mixture is smooth and fully blended.
  3. Preheat a medium-sized non-stick pan over medium heat. 
  4. Add a tablespoon or two of vegan butter.
  5. Once the butter has melted, pour about 1/3 cup of batter into the pan. 
  6. Quickly swirl the pan to spread the batter into a thin, even layer.
  7. Cook the crepe for about 2 mins until the surface looks almost dry. 
  8. Gently flip it with a spatula and cook for another 30 seconds on the other side. 
  9. Transfer the crepe to a plate and repeat with the remaining batter.
Spoon the caramelised bananas over the crepes and enjoy!
