VEGAN SUPER PROTEIN SALAD

Serves: 4-6

The absolute bees knees when it comes to salads! One of our fav combination of flavours with the sticky fruity sweetness (pomegranate molasses), bursts of freshness (pomegranate) & nuttiness (toasted seeds & nuts). Contains 5 different sources of plant protein so no chance of being unsatisfied.

INGREDIENTS

1/2 cup coriander (chopped)
1 cup parsley (chopped)
1/2 red onion (finely diced)
1.5 cup cooked quinoa
1/2 cup tinned brown lentils
4 tbsp pumpkin seeds
2 tbsp slivered almonds
2 tbsp pine nuts
1/3 cup dried cranberries
1/2 cup fresh blueberries

Dressing

3 tbsp pomegranate molasses
2 tbsp apple cider vinegar
1 tbsp dijon mustard
1 tbsp maple syrup
2/3 cup extra virgin olive oil
1/2 tsp salt and pepper

METHOD

  1.  Cook quinoa as per packet instructions
  2. Toast the pumpkin seeds, slivered almonds & pine nuts over medium heat in a pan until slightly golden
  3. In a large bowl, place the coriander, parsley, red onion, quinoa, lentils, toasted nuts, cranberries, blueberries and pomegranate
  4. Add all dressing ingredients to a jar and shake until combined
  5. Pour over salad and mix through until coated
