We have tried a lot of falafel recipes but this is hands down the best & easiest recipe. Guaranteed to be have a fluffy soft inside & crispy outside every time.
3 tips to make sure you get them spot on:
- Use dried chickpeas. Canned chickpeas contain a lot of moisture and your falafels will be soggy Sally's.
- Use the stems of the parsley and coriander this gives them that beautiful green colour and adds more flavour
- When frying them, avoid flipping too often because they tend to fall apart
INGREDIENTS⠀⠀⠀⠀⠀⠀⠀
1 cup dried chickpeas
2 tsp cumin powder
2 garlic gloves
1/2 red onion
1 cup parsley
1 cup coriander
1 tbsp oat flour
1 tsp salt
1/2 tsp black pepper

METHOD
- Cover chickpeas with water and soak overnight
- Place all remaining ingredients into a food processor and whizz until combined
- Heat 1 tbsp of olive oil in a non stick pan
- Use a spoon to divide chickpeas into equal sizes
- Fry one side for 4 minutes and flip and fry for another 4
- Eat as is or in a pita pocket with hummus and vege
