SERIOUSLY...these Loaded Vegan Nachos are an absolutely a must try! Not only is this a healthier option than traditional nachos but they taste even better. It's literally a matter of putting some things in a bowl and then placing them on the baking tray - can't get much simpler than this!


1 packet corn tortilla chips
1 cup The Vegan Dairy Hemp Mozzarella
2 cups salsa (2 diced fresh tomatoes, 1/2 diced red onion and 3 tbsp fresh lime juice + 1/2 tsp salt)
2 cups organic black beans
1 cup guacamole (add 1 avocado, squeeze of lime, 1 clove crushed garlic and mash)
1/4 cup jalapeños
1/3 cup of fresh coriander
1/3 cup natural coconut yoghurt
A dash of habanero sauce (A DASH 🔥)

Vegan nachos in a baking tray


1. Preheat oven to 200 degrees
2. Use a thin baking tray and place tortillas down
3. Grate mozzarella and sprinkle half over the tortillas
4. Add beans, tomato salsa & jalapeños then the remainder of mozzarella
5. Bake in oven for 10 minutes
6. Top with dollops of guacamole & coconut yoghurt then scatter coriander leaves, squeeze of lime and put a few small dashes of habanero sauce

Get in there and eat!! 😎
