I’m not the biggest coffee fan BUT I am a huge fan of this vegan tiramisu...go figure, the girl who doesn’t like coffee likes the coffee dessert!
We love this recipe because it’s not too sweet and has just the right balance of creaminess and coffee. We didn’t add the coffee liquor to ours but if you are feeling a bit dangerous then go for gold.
INGREDIENTS:

2.5 cups flour
2 tbsp cornstarch
1 tbsp baking powder
1/2 tsp salt
1 cup caster sugar
3/4 cup neutral oil (not olive oil)
1.5 cups unsweetened soy milk
2 tsp apple cider vinegar
1 tbsp pure vanilla extract
MASCARPONE
250g vegan cream cheese
1/2 cup caster sugar
1/4 cup refined coconut oil
2 tsp pure vanilla extract
1/2 cup coconut cream
ESPRESSO MIXTURE
1 cup of instant coffee
3 tbsp caser sugar
4 tbsp Kahlua (optional)
