We've made some switches in our house and the latest has been saying goodbye to nuttelex and hello to making our own vegan butter. The best part is it takes less than 5 minutes to prepare and doesn't use any nasty additives or colourings. It melts just like butter when using it on toast...winning!

INGREDIENTS

1 cup refined coconut oil (no taste and odourless)
½ cup almond flour
150 mls unsweetened soy
2 tsp nutritional yeast
1 tsp salt
1 tsp apple cider vinegar
A small pinch ground turmeric
60 ml ml canola oil

METHOD

  1. Melt the coconut oil and allow to cool to room temperature
  2. Put almond flour, milk, salt, nutritional yeast, vinegar & turmeric into a blender and blend until smooth
  3. Add the refined coconut oil and olive oil then blend until velvety smooth.
  4. Pour the liquid butter into a glass container, cover and refrigerate overnight
