Coco-Berry Granola Cookies

Preparation time: 10 mins prep + 10 min baking time + 20 min cooling

Granola needs a little shake up, it's so delicious in a bowl with milk but we love getting creative in the kitchen! Think outside the box with our Coco-Berry Granola Cookies...with a little sneaky chocolate! These little gems are absolute magic for those days where you just need a little on the go healthy treat. Super chewy, super delicious and super easy to make! ⠀⠀⠀⠀

INGREDIENTS⠀⠀⠀⠀⠀⠀⠀

1 cup oat flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups of Coco-Berry Granola⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 apple sauce/pureed apple⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup coconut sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup coconut oil (melted)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup non diary chocolate chips.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Coco-Berry Granola Cookies

METHOD

  1. Preheat oven to 180 degrees and line a large baking tray ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  2.  In a bowl, combine the flour, baking soda and salt then add the granola⠀⠀⠀⠀⠀⠀⠀⠀⠀
  3. Stir granola mix into the remaining wet ingredients then add the chocolate chips⠀⠀⠀⠀⠀⠀⠀⠀⠀
  4. Use a tablespoon to measure out and dollop onto baking tray (they will not spread so you can leave less space between them)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  5. Bake for 10 minutes or until golden⠀⠀⠀⠀⠀⠀⠀⠀⠀
  6. Leave to cool for 20 minutes then eat!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
