Yellow Spinach Dahl

Yellow Spinach Dahl

This is a regular recipe in our household because it's so easy and lentils are just plain delish! It's filling and full of wholesome nutrition which is an added bonus. We often pair ours with Bites & Original Loaf to add a more sustenance. This recipe is amazing the next day and can be frozen for when you are short of time.

INGREDIENTS

300g dried yellow split peas
750ml vegetable stock
3 cups baby spinach⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can diced tomatoes
1/4 cup coriander (can be subbed for parsley)
2 minced garlic cloves
1 tbsp ginger
2 tbsp nutritional flakes⠀
1 tsp white miso paste
1 tsp cumin
1/2 tsp dried turmeric⠀
1 packet Stone Age Staple Bites⠀⠀
1 loaf Original Loaf

METHOD
  1. Soak split peas in boiling water for 1 hour
  2. Drain and transfer split peas to a large pot with the stock
  3. Simmer for 45 mins or until the split peas are soft
  4. Add spinach and tomatoes⠀
  5. Heat a 1 tsp of olive oil in a small pan⠀
  6. Add garlic and ginger and cook for 1 minute
  7. Remove from heat and add nutritional yeast, miso paste, cumin, coriander and turmeric then add to the split pea mixture⠀
  8. Crumble the Bites and sprinkle over the top and serve with a side of Stone Age Staples Loaf
