Vegan Custard with Stewed Stone Fruits + Coco-Berry Granola

Who says you have to miss out on custard when you go plant-based? Not us that's for sure! I'm not going to lie, when we first went plant-based, there were so many 'favourites' that we thought would be off limits. How wrong we were!! This dessert is so delicious it actually made it's way onto our family Christmas lunch! Tart stewed seasonal fruits, silky smooth custard and crunchy Coco-Berry Granola, what a combo!  

CUSTARD

  • 2 cups soy milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 4 tbsp white sugar ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tbsp vanilla extract⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • pinch sea salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/4 cup corn flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/4 cup water ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Pinch turmeric

STEWED FRUIT

  • 500g seasonal stone fruits
  • 1 tbsp apple juice
  • 1 tbsp coconut sugar

METHOD

CUSTARD

  1. Add soy milk, vanilla, and salt and sugar to a small saucepan⠀⠀⠀⠀⠀⠀⠀⠀⠀
  2. Mix together cornflour and water in a separate bowl
  3. Add to saucepan and place on a medium heat on your stovetop and then add lemon juice
  4. Gently bring to the boil then turn heat down
  5. Continuously whisk until it thickens then take off heat
  6. To make it yellow either add a tiny pinch of turmeric

STEWED FRUIT

  1. Halve and remove the pip from stone fruits
  2. Place stone fruits, apple juice & coconut sugar into a medium saucepan 
  3. Bring to the boil then turn down to low and simmer for 15 minutes until fruit is soft

Finally, add half a cup of Coco-Berry Granola, generous amount of the stewed fruit and a big dollop of custard to a serving bowl. Mix (optional) and enjoy!
