Nicetella Cookies

Boy oh boy...these cookies are really something! Super easy, ready in 35 minutes and 100% vegan. They have the perfect balance of sweetness and hazelnut creaminess (thanks to the Nicetella). Great for on the go snack, dessert or on a lazy Sunday afternoon with a cup of tea! 

INGREDIENTS⠀⠀⠀⠀⠀⠀⠀

1/2 cup nuttelex ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup coconut sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of Nictella
1 tsp vanilla extract⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup oat flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
2/3 cup cocoa powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp baking soda⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp almond milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup vegan dark chocolate chips⠀⠀⠀⠀

Nicetella Cookies

METHOD

  1. Preheat the oven to 180°C⠀⠀⠀⠀⠀⠀⠀⠀⠀
  2. Add the nuttelex, coconut sugar, Nicetella & maple mixing bowl and beat until they cream together. Once creamed, add the vanilla.
  3. Sift oat flour and cocoa powder into another mixing bowl, add baking soda and salt.
  4.  Add dry ingredients from step 3 into the wet ingredients from step 2⠀⠀⠀⠀⠀⠀⠀⠀⠀
  5. Add the soy mix until a cookie dough starts to form⠀⠀⠀⠀⠀⠀⠀⠀⠀
  6. Add the chocolate chunks and roll into small balls
  7. Place the balls onto a baking tray and push down with the top of a fork (leave about 3cm space between them)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  8. Bake for 10 minutes and cool for 10 minutes
