Coconut Peanut Butter Dressing

Looking for a new flavour sensation to add to your salads? Then this is one for you. This dressing is just simply delicious...think creamy, salty with a touch of heat. Absolutely perfect on pretty much every salad and buddha bowl. 100% delicious, easy, quick and can be stored in fridge for 2 weeks. It's as simple as putting everything in a saucepan. 

INGREDIENTS⠀⠀⠀⠀⠀⠀⠀

1 can of full cream coconut milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup Thai red curry paste⠀⠀⠀⠀⠀⠀⠀⠀⠀
3/4 cup Stone Age Staples Sweet Roasted Peanut Butter
1/2 tsp sea salt⠀
3/4 cup coconut sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp apple cider vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of water⠀

Coconut Peanut Butter Dressing

METHOD

  1. Combine all ingredients in a medium saucepan and bring to the gentle boil whisking constantly
  2. Reduce to a simmer for 5 minutes and allow to cool (sauce will thicken)
  3. Can be stored in a airtight jar for 2 weeks in fridge
